Crisp-skinned salmon topped with a fresh orange, avocado and herb salsa. Rich in omega-3s and ready in about 20 minutes.
Ingredients
- 2 salmon fillets (about 5 oz each), skin on
- 1 tbsp olive oil
- Salt and black pepper
- 1 orange, peeled and diced
- 1/2 ripe avocado, diced
- 2 tbsp finely chopped red onion
- 2 tbsp chopped fresh cilantro or mint
- Juice of 1/2 lime
- Cooked brown rice or greens, to serve
Method
- Gently stir the orange, avocado, onion, herbs, lime juice and a pinch of salt in a bowl. Set aside.
- Pat the salmon dry and season with salt and pepper.
- Heat the oil in a nonstick skillet over medium-high heat. Cook the salmon skin side down for 4 to 5 minutes, until the skin is crisp.
- Flip and cook 2 to 3 minutes more, until the salmon flakes easily and reaches 145°F.
- Serve over rice or greens with the salsa spooned on top.
Thicker fillets take a little longer, so check with a thermometer. Diced mango works instead of orange in summer.
